With the fantastic weather we’re having at the moment the last thing we want to do is be baking in a hot, sticky kitchen, but sweet treats are still a must for us. That’s why we decided to make our own ice lollies. There are so many options for zingy or creamy lollies to cool you down in the heat, but what could be more summery than a fresh, fruity cocktail-style recipe. These pina colada ice lollies can be boozed up with rum for adults, or kept to the recipe below for the little ones:
To make 6 ice lollies you will need:
- 1 can pineapple chunks, in juice
- 1 large banana
- 1 can coconut milk
- 1 tablespoon vanilla extract
- Optional - as much rum as you’d like!
1. Place the pineapple chucks and banana into a blender and blend them together until smooth. Pour one-third of the mixture into a bowl and leave to one side.
2. Add the coconut milk, vanilla extract and rum (if using) to the remainder of the mixture and blend again until all the ingredients are combined.
3. Pour the mixture through a strainer to remove any lumps.
4. Pour into the lolly moulds so they are three-quarters full, and place in the freezer for a minimum of an hour to set.
5. Remove from the freezer and add the remaining pineapple and banana mixture to the mould and place a stick into the middle of the lolly. Return to the freezer overnight.
6. To remove the lollies from the mould, hold under warm water.
