Healthy “ice-cream” Dairy-free, Gluten-Free, Refined Sugar-free

With all this beautiful weather and the kids soon off for their holidays I thought I’d start off with a favourite. This recipe is the perfect summer staple - packed with only the good stuff, it is honestly the easiest “ice-cream” recipe you’ll ever try and healthy enough to eat for breakfast! Nana Ice-Cream as it’s known by throughout the vegans of instagram world refers to the simple process of freezing blended bananas to make a creamy, sweet ice-cream replacement.

In this recipe I will be explaining how to make a strawberry flavour but you can experiment with just about anything - peaches, raspberries, desiccated coconut, a few teaspoons of raw cacao or peanut butter, and for added goodness even an avocado!

Here’s the recipe to make enough for a large tub:

Blend - 3 whole ripe bananas
Half a punnet of fresh organic strawberries (berries are so important to buy organic as they absorb chemicals which you can’t rinse off)

1 large tub of co-yo coconut yogurt (or any yogurt replacement but avoid soya. Of course if you don’t want to give up dairy you can use regular yogurt. If you use regular yogurt half a tub with suffice.
You can also skip this ingredient altogether if you prefer, will just make it less ‘creamy’ but will still be delish!) 2 teaspoons of sugar free 100% fruit strawberry jam/spread (St Dalfour is a good choice)

A dash of almond milk/rice milk Spoon into small freezable bpa-free tubs (we use weaning pots!) and place in the freezer for about 3-4 hours.

Please note that without the preservatives found in regular ice cream you may find this mixture freezing solid - just leave for 10 mins on the counter before scooping! And that’s literally it! Top with fresh fruit, cacao nibs, flax.. Whatever you fancy or nothing at all.
