Laura and Tia from Little Button Diaries here! We wanted to share with you a really quick and simple recipe - crispy Marshmallow fruit skewers that are perfect for a summer’s day BBQ or picnic. These quick treats are easy to make, taste delicious and you can get your little ones to help out too.
To make 10 skewers you will need:
- 45g butter
- 300g mini marshmallows
- 180g Rice Krispies
- 200g white chocolate
- 100s and 1000s
- Blueberries
- Strawberries
- Wooden skewers
Begin by melting the butter in a saucepan over a low heat.
Add the marshmallows to the melted butter and cook gently until they are melted, stirring constantly.
Take the pan off the heat, add the Rice Krispies and stir the mixture until all the cereal is covered. Press the mixture into a greased and lined pan until it is completely flattened and is tightly compressed. Leave to cool.
Once cooled, using a cookie cutter cut out the crispy mixtures into shapes.
Melt the white chocolate over a pan of water and leave to cool a little. Coat the top of your shapes with white chocolate and sprinkle on 100s and 1000s.
Once the chocolate has set, assemble the skewers, alternating fruit and crispy shapes.
